Speedy Fettuccine

9 ounces fettuccine noodles
1 tablespoon butter
3/4 cup of frozen baby sweet peas (or broccoli)
2/3 cup half and half
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon pepper

Garnish: fresh shaved Parmesan cheese

Optional: Grilled chicken

1. Prepare pasta according to package directions.

2. Melt butter in large skillet over medium heat. Add peas and next 6 ingredients. Reduce heat to low, and cook, stirring constantly, 5 minutes or until cheese is melted. Stir in hot cooked pasta (and grilled chicken, optional) and serve immediately.
